Shrimp and Pasta in a Basil Cream Sauce

INGREDIENTS:

SERVINGS 2

1 tablespoon olive oil
1 tablespoon butter
1⁄4 cup shallot, thinly sliced (one large shallot)
1 tablespoon garlic, minced (2-3 cloves)
1⁄3 lb shrimp, peeled and deveined
1⁄3 cup grape tomatoes (2 good handfuls) or 1⁄3 cup cherry tomatoes (2 good handfuls)
1⁄2 ounce pine nuts (about a quarter of a small bag)
1⁄2 cup dry vermouth or 1⁄2 cup dry white wine (can use chicken stock as well)
1 cup heavy cream
2 tablespoons basil, sliced in a chiffinade (about 10 to 12 large leaves)
1⁄3 lb pasta (I used spaghetti)
2 tablespoons chives, chopped
salt and pepper

DIRECTIONS:

Start the water for the pasta. When it comes to a boil, add salt and pasta and cook until al dente.

In a skillet, heat olive oil and butter. When butter stops foaming, add shallots and garlic, and a pinch of salt and black pepper, and saute until shallots are tender.

Add shrimp, grape tomatoes, and pine nuts and cook until tomatoes burst.

Remove everything from pan and keep warm.
Return pan to heat and add vermouth. Allow to cook down for 1 minute while scraping up the brown bits from the bottom of the pan.

Add the cream, and salt and pepper to taste. I used about 20 grinds of fresh ground black pepper and a healthy pinch of kosher salt.

Stir well and cook until cream reduces and thickens. Stir often during this process so your cream doesn't stick to the bottom and burn.

To chiffinade the basil, pile the basil leaves neatly on top of each other, then roll the whole pile into a long, tight log. Cut the log into thin slices.

When sauce reaches desired thickness, add basil to cream sauce and stir well. Cook for a minute or two to let the basil infuse the cream.
Return shrimp and tomato mixture to pan and heat through.

Serve over your choice of pasta. Garnish with chives and parmesan cheese, if desired, and serve with crusty bread and a nice salad on the side.

Enjoy!

Remove the chicken wings from the buttermilk marinade, and discard the remaining marinade. Enjoy marinated and grilled chicken wings with a spicy soy sauce

Makes 20 pieces
Prep Time 15 minutes
Cooking Time 20 minutes

INGREDIENTS:

20 pieces chicken wings (around 2 kilos in total)
2 tablespoons plus 1/2 teaspoon salt, divided
1 cup rice flour
Oil for deep frying

1 Place chicken wings in a large pot and add enough water to cover the chicken. Add 2 tablespoons salt. Let water simmer for about 10 to 15 minutes or until chicken wings are cooked. Drain chicken on a wire rack until thoroughly dry.

2 Mix rice flour and 1/2 teaspoon salt in a large bowl. Dredge chicken in the mixture, coating the wings thinly. Shake off excess.

3 Heat oil to 350°F in a large pot. If you don’t have a thermometer, test the oil’s temperature by dropping a piece of bread into it—it should bubble and brown immediately. Discard bread and proceed to cook. Deep-fry chicken in batches for 5 to 10 minutes until skin is crispy and golden brown. Drain on a wire rack. When cool enough to handle, toss in choice of sauce.
This is a family favorite, adapted from Melissa d'Arabian, "Ten Dollar Dinners" on The Food Network. In a large ovenproof sauté pan over medium heat, cook the whole garlic cloves in olive oil and butter, stirring occasionally, until lightly golden, about 10 minutes.

INGREDIENTS:

8 chicken thighs
kosher salt and freshly ground black pepper
1 head garlic, separated into whole cloves, papery skin removed (about 20 cloves)
3 tablespoons olive oil
1 tablespoon butter
2 teaspoons herbes de Provence
1 teaspoon flour
1/4 cup chicken stock
1/2 lemon, juiced
bread, for serving

DIRECTIONS:

Preheat the oven to 350 degrees F.
Rinse and pat dry the chicken. Salt and pepper liberally and allow to temper on a cutting board while you prepare the garlic.
In a large ovenproof saute pan over medium heat, cook the whole garlic cloves in olive oil and butter, stirring occasionally, until lightly golden, about 10 minutes. Remove the garlic from the pan and set aside.
Increase the heat to medium high and brown the chicken skin-side down until the skin is golden and crispy, about 5 minutes. Turn the chicken over, sprinkle on herbes de Provence.
Add the garlic back to the pan and place hot pan in oven. Bake the chicken until cooked through, about 25 minutes.
Once the chicken is done, remove chicken thighs and garlic to a platter. Place the pan over medium-high heat and sprinkle the drippings with flour and stir to incorporate. Deglaze the pan with the stock and lemon juice. *
Pour the sauce over the chicken on the platter and serve with bread for sauce-mopping and garlic-spreading.

*Some tips for the gravy:

Make sure the drippings are heated thoroughly before adding flour, followed by the stock and lemon juice.
Depending on how much drippings your chicken produced, you may want to add butter to the drippings and heat thoroughly before adding the flour.

Tinola is a ginger and onion based soup with chicken as the usual main ingredient. Chicken tinola is an authentic Filipino main dish and best complimented with green papaya wedges (an alternative is chayote) and chili pepper leaves. As a traditional dish, the chicken is usually cooked in low heat for quite some time to bring out the natural flavor. This dish is best served during cold and rainy weather because of the warming effect of the soup.

INGREDIENTS:

2 lbs chicken (cut into serving pieces)
1 thumb size ginger root cut into strips
3 cloves garlic (minced)
1 onion (sliced)
2 small to medium sayote/chayote or green papaya (cut into wedges)
1/2 cup pepper leaves
1 Tbsp Fish Sauce (Patis)
3 cups of water
1 chicken cube
2 tbsp coking oil

HOW TO COOK TINOLA MANOK:

In a saucepan, saute the garlic, onion & ginger in cooking oil.
Add the chicken and cook for 5 minutes or until the chicken colors lightly.
Add the fish sauce.
Pour-in water and bring to a boil. Simmer until chicken is done about 30 minutes.
Add the chicken cube and sayote/chayote. Continue simmering until sayote/chayote is tender.
Add pepper leaves and salt to taste.
Remove from heat.
Serve hot. Enjoy!
Chicken with ampalaya in oyster sauce is a quick and easy dish that you can make for lunch or dinner. Whether you are cooking just for yourself or for the whole family, this dish will surely be a hit. Aside from being easy, Chicken with Ampalaya is also healthy because it is rich in protein and other nutrients.

Not everyone here might like Ampalaya. I get it. The bitter taste of this healthy vegetable makes it less appetizing. However, you can always try to do something to make it taste less bitter – like rubbing salt on it to let the bitter juices go out, perhaps. You can also try to have it regularly so that you will get used to the taste. In my opinion, the health benefits of Ampalaya will outweigh its bitter taste.

I enjoy this dish with a cup of warm brown rice. Sometimes, I also have this with Ensaladang Talbos ng Kamote.

Try this Chicken with Ampalaya Recipe. Let me know what you think.

2 tablespoon black bean sauce
salt and ground black pepper to taste
1 cup water
2 tablespoon canola oil

Direction:

Saute ginger, onion and garlic in cooking oil till caramelized.
Add slices of chicken till chicken turns golden brown.
Season with ground pepper, hoisin sauce and black bean sauce. Stir for few minutes.
Pour in 1 cup of water. Season with more salt and ground pepper if needed.
Reduce heat in medium low and simmer till chicken is fully cooked and sauce reduced to half.
Add the ampalaya and simmer for few more minutes uncovered.
Remove the dish from heat, transfer to a serving dish and serve with steam rice.

I recently received the Jamie Oliver 15 minute meals book as a gift. What a gift!! I am loving the quick and more importantly healthy recipes that are in it and they are all just packed with my kinds of flavour! I will be trying and testing and blogging the good ones for you. I tried this one last night. I was a bit worried about steaming buns and steaming chicken (!!) as I had never done that before but it was so exciting to see how it all just worked!
I used portobellini  mushrooms as I couldn’t get to the right shop to get the mixed mushrooms, but they worked beautifully. I laid it all out in the steamer and in the small bowls (see the definition of Dim Sum below) and my family tucked in! We loved it J
You do need one of these bamboo steamers though – it’s essential!

Steamed Coconut Buns with Chicken and Broccoli

Homemade Hoisin Sauce:
Ingredients:
4 tbsp coconut aminos

2 tbsp almond butter
1 tsp rice wine vinegar
1 tsp black pepper
1.5 tsp sesame oil
½ tsp chilli powder
1 tsp honey
1 clove garlic, crushed

Directions:
1. Using either a small blender, a bowl with a whisk or just an old jar, combine all ingredients and blend, whisk or shake well until combined. Set aside until ready to use.

Steamed Chicken with broccoli:
Ingredients:
500g chicken breast or tenderloin, thinly sliced
1 large carrot, chopped into 1cm thick diagonal slices
½ cup field mushrooms, chopped
½ cup button mushrooms, chopped
1 cup snow peas, trimmed
10 stems of broccolini, or 10 large broccoli florets

Directions:
1. Cut chicken into thin strips and place into a large bowl. Cover with about 2-3 tbsps of your prepared hoisin sauce. If you have time, marinate for an hour or so, but if not it doesn't matter.
2. Add chopped vegetables to the bowl, excluding the broccoli and snow peas. Get sauce coating everything well.
3. In a large steamer, place combined chicken and vegetables. Lay snow peas and broccoli over the top. Steam for around 10-15 minutes until chicken is cooked.
4. Serve on a large plate and garnish with fresh coriander and diced chilli.

Coconut Buns:
Ingredients:
½ cup coconut milk
1 cup gluten free self raising flour
1 tbsp coconut aminos
pinch of chilli
1 tsp sesame oil
½ tsp salt
1 tsp garlic powder

Directions:
1. Over medium heat set up a food steamer with a few inches of water in the bottom. Bring to the boil to create steam (ideally you would be best to use a bamboo steamer, but any steamer pot system will work).
2. Place all ingredients in a food processor. Blend until a sticky dough forms.
3. Place large scoops of the dough into muffin patty cases.
4. Place patty cases in the steamer and steam for around 10 minutes until cooked through.
5. Serve as soon as possible. These are best when still warm and fluffy.

Cucumber Pickle:
Ingredients:
½ telegraph cucumber
1 tbsp coconut aminos
1 tbsp rice wine vinegar

Directions:
1. Using a vegetable peeler, peel lengthways down the cucumber to get long ribbons. Combine in a bowl with dressing. Give it a good squeeze with your hands to really get the pickle flavour infused into the cucumber

To garnish:
¼ cup toasted sesame seeds (over a low heat in a small frying pan, toast the seeds until golden brown)
large handful of coriander, roughly torn
1 red chilli, roughly chopped

To assemble the meal:
Put the buns and the chicken on large plates, and in small bowls put the rest of the hoisin sauce, the sesame seeds and the cucumber.

To eat, get in there with your hands! Rip the buns apart, dip them in the sauce, then the seeds, stuff them full of the chicken... make it your way!

This meal really will become a family favourite, and although it wasn't quite 15 minutes as per Jamie Oliver, it was probably only about half an hour to make all up. Fast, healthy, filling and affordable - what could be better?!

While many of his recipes stretch further than this basic lineup, his classic chicken adobo is the perfect example of the simplicity of this potent

Serves 4–6 as part of a multi-course meal
Prep Time: 5 minutes
Cooking Time: 45 minutes

¼ cup (65 ml) soy sauce
½ cup (125 ml) white cane vinegar, or distilled white vinegar
6–8 cloves garlic, smashed with the side of a knife and peeled
1 teaspoon whole black peppercorns
2 bay leaves
6 skin-on, bone-in chicken thighs

1. Place the soy sauce, vinegar, garlic, black peppercorns, and bay leaves in a large, nonreactive sauté pan, and then nestle the chicken thighs, skin side down, into the pan. Bring the liquid to a boil over high heat, and then cover and simmer over low heat for 20 minutes. Turn the chicken over, and then cover and simmer for another 10 minutes.
2. Uncover the pan, and then increase the heat to high and return the sauce to a boil. While occasionally turning and basting the chicken, continue boiling the sauce, uncovered, until it is reduced by half and thickens slightly, 5–7 minutes. Serve with steamed white rice.

VARIATIONS: While the sauce is reducing, transfer the chicken thighs, skin side up, to a foil-lined sheet pan. Brown the chicken thighs underneath the broiler for 3–5 minutes.
Use freshly ground black pepper instead of whole peppercorns.
For a “drier” chicken adobo, you can reduce the sauce until it is almost completely evaporated.
The chicken will then begin to fry in its own fat that is still left in the pan. This is how my grandmother finishes her adobo. For a saucier adobo, double the amount of soy sauce and vinegar.
To make this adobo as an appetizer, use 2 lbs (1 kg) of chicken wings instead of thighs.

When ready to serve the chicken, heat the rest of the oil in a separate pan and crisp the skin once more. Serve the sauce on the side and some white rice.
